Founded in 2003 in Agadir, Andrexport Sarl represents the convergence of two powerful forces: the rich, abundant fishing grounds of the Moroccan Atlantic and the ancient Sicilian tradition of fish curing.

We were established with a singular mission: to protect and propagate the art of salted anchovies. While we operate on an industrial scale, our philosophy remains strictly artisanal. We do not manufacture; we curate. By bridging the gap between historical craftsmanship and modern export demands, we bring the authentic taste of the Mediterranean to the global stage.

Our diverse workforce preserves techniques that have been passed down through generations. Every fillet is handled with intent and precision. This commitment to manual processing is not just a method, it is a value system that respects the texture, integrity, and delicate flavor of the fish.

A Timeline of Perfection

01. The Source

Speed is the guardian of quality. We source our anchovies exclusively from the nutrient-rich waters of the Atlantic, landing fresh catch daily at the port of Agadir. Immediate processing ensures that the ocean's freshness is captured instantly.

02. The Cure

Upon arrival, the anchovies are meticulously prepared gutted and beheaded by hand before being layered in barrels with sea salt. This is the beginning of the transformation, a traditional technique that requires exact proportions and expert judgment.

03. The Alchemy of Time

True flavor cannot be rushed. Our anchovies undergo a slow maturation period of 6 to 12 months. In the quiet of our cellars, the salt works its magic, transforming the texture and bestowing the fish with its signature reddish-purple hue and profound, complex umami profile.

04. The Reveal

Once the maturation is complete, our artisans hand-separate the fillets. This delicate stage requires exceptional dexterity to ensure consistent sizing and flawless presentation, delivering a product that is visually stunning and culinarily superior.

To serve the world, one must meet the world’s standards. Andrexport operates two advanced production facilities covering 15,000 square meters.

While our methods are rooted in history, our environment is cutting-edge. We have integrated internal chemical and bacteriological laboratories to maintain absolute control over product safety.

This fusion of old-world skill and new-world hygiene allows us to maintain certifications from IFS, BRC, and FDA compliance, ensuring that our "artisanal" product is safe enough for the most demanding international markets.
