While we catch our anchovies fresh daily to ensure quality, our true secret lies in waiting. Following authentic Sicilian methods, our fish are placed in salt barrels and left to mature for 6 to 12 months. This slow aging process is non-negotiable, it is what creates the distinctive reddish-purple hue and the deep, rich umami flavor our clients expect. Once matured, every single fillet is meticulously separated by hand, ensuring a texture and consistency that machines simply cannot replicate.
